Papaya Carrot Crunch

Shredded raw papaya and carrot tossed in a crushed garlic-chili-tomato dressing with roasted peanuts.

Ingredients

  • 1 cup raw papaya, shredded
  • 1 cup carrot, shredded
  • 1 small tomato
  • 2โ€“3 garlic cloves
  • 1โ€“2 green chilies
  • 1โ€“2 tsp jaggery powder
  • 1โ€“1ยฝ tbsp lemon juice
  • 1 tsp soy sauce
  • Salt, to taste
  • 2 tbsp roasted peanuts
  • A little chopped coriander, optional

Method

  1. In a stone crusher or mortar-pestle, crush the garlic, green chilies, and tomato together.

  2. Add jaggery powder, lemon juice, and soy sauce, and mix well into the crushed mixture. Add salt to taste.

  3. Put the shredded papaya and carrot in a bowl. Pour the dressing over them and toss really well.

  4. Add roasted peanuts and coriander at the end. Let it sit for 5 minutes, then serve.


Note: Crushing the garlic, chili, and tomato first makes a juicier dressing and gives that proper salad flavor instead of just coating the vegetables from outside.
