Apple, Carrot & Cucumber Salad with Jaggery-Lemon Dressing

A fresh, crunchy salad — sweet apple, crisp cucumber, carrots, nuts, and soft mozzarella, tossed in a jaggery-lemon dressing that's gently sweet with a slight tang.

Ingredients

For the salad

  • Apple, cut into thin sticks
  • Carrot, cut into sticks
  • Cucumber, cut into sticks
  • Fresh mozzarella, torn or chopped
  • Walnuts
  • Sliced almonds

For the dressing

  • Jaggery powder
  • Lemon juice
  • A little honey
  • Salt
  • Black pepper
  • Oregano

Method

  1. Add the apple, carrot, and cucumber sticks to a large bowl.

  2. Add the walnuts, sliced almonds, and mozzarella pieces.

  3. In a small bowl, mix together the jaggery powder, lemon juice, honey, salt, black pepper, and oregano. Whisk until the jaggery dissolves into the dressing.

  4. Pour the dressing over the salad and toss gently so everything is evenly coated.

  5. Taste and adjust salt, lemon, or sweetness if needed.

  6. Serve fresh.


Tips: Cut the apple just before serving so it doesn’t brown. Chilling the salad for 10–15 minutes makes it more refreshing. Adjust the jaggery and lemon based on how sweet or tangy you like it. Works as a light meal on its own or as a bright side alongside something richer.
