Cucumber Sandwiches with Herbed Cream Cheese Spread
Soft white bread layered with thinly sliced cucumber and a creamy spread of cream cheese, mayo, lemon, and fresh coriander.
Ingredients
- 8 slices soft white bread
- 1 medium cucumber, thinly sliced using a mandolin
For the spread
- 3โ4 tbsp cream cheese
- 1โ2 tbsp mayonnaise
- 1โ2 tsp lemon juice
- 1โ2 tbsp fresh coriander, finely chopped
- Salt, to taste
- Black pepper, to taste
Method
1. Make the spread
In a small bowl, combine the cream cheese, mayonnaise, lemon juice, chopped coriander, salt, and black pepper. Mix until smooth and spreadable. Taste and adjust the seasoning if needed.
2. Assemble the sandwiches
Lay out the bread slices on a clean surface. Spread a generous layer of the cream cheese mixture over one side of each slice. Arrange the thinly sliced cucumber evenly over half of the bread slices. Cover with the remaining bread slices, spread side down. Press very gently so the sandwiches hold together without squashing the filling. Trim the edges if you want a cleaner, softer tea-sandwich style finish. Cut into rectangles or triangles and serve fresh.
Tips: Using a mandolin helps keep the cucumber slices very thin and even, which makes the sandwiches feel more delicate. Pat the cucumber slices dry lightly before assembling if they seem watery.
