Broccoli & Egg Salad with Sesame Dressing

Tender-crisp blanched broccoli and creamy boiled eggs tossed in a nutty, umami-rich sesame dressing.

Ingredients

  • 1 head of broccoli, cut into bite-sized florets
  • 2 - 3 eggs, boiled and halved or quartered

Sesame Dressing

  • 3 tbsp sesame seeds, toasted
  • 3 tbsp plain Greek yogurt
  • 1 tbsp mayonnaise
  • 1 tbsp honey
  • ½ tbsp soy sauce
  • 1½ tsp salt
  • Pinch of black pepper

Method

  1. Bring a pot of salted water to a boil. Add the broccoli florets and blanch for about 2 minutes, until bright green and tender-crisp. Drain and immediately rinse under cold water to stop the cooking. Pat dry.

  2. Grind the toasted sesame seeds in a spice grinder until coarsely powdered — you want some texture, not a paste. Transfer to a bowl and whisk in the soy sauce, mayonnaise, Greek yogurt, honey, salt, and a pinch of black pepper. Taste and adjust seasoning.

  3. Arrange the broccoli and eggs in a bowl. Pour the dressing over and toss gently to coat. Serve right away, or let it sit for a few minutes to let the flavors meld.
