Avocado Egg Toast
Creamy mashed avocado mixed with chopped boiled eggs and a little cream cheese, spooned over crispy toast and topped with grated cheese.
Ingredients
- 2 slices bread (any bread you like)
- 1 ripe avocado
- 2 boiled eggs, chopped
- 1โ2 tbsp cream cheese (optional)
- 2โ3 tbsp cheese, grated
- Salt, to taste
- Black pepper, to taste
- A squeeze of lemon juice (optional)
Method

Toast the bread slices until golden and crisp. You can use a pan or toaster.

In a bowl, mash the avocado lightly. Add the chopped boiled eggs.

Mix in a little cream cheese if using. This makes the mixture smoother and richer.

Add salt, black pepper, and a squeeze of lemon juice if using. Mix everything together, keeping it slightly chunky.

Spoon the avocado and egg mixture over the toasted bread.

Sprinkle grated cheese on top.

Serve immediately while the toast is still crisp.
Tips: Cream cheese is optional but adds a really nice creamy texture. Keep the avocado slightly chunky for better bite. You can add chilli flakes for a little heat. Best served fresh so the toast stays crisp.
