Egg Mayo Toast

Crispy sourdough toast spread with creamy mayo, topped with neatly sliced boiled eggs, a pinch of red chilli powder, and fresh coriander.

Ingredients

  • 2 slices sourdough bread (or any bread you like)
  • 2 boiled eggs
  • 2โ€“3 tbsp mayonnaise
  • A pinch of red chilli powder
  • Fresh coriander, finely chopped
  • Salt, to taste (optional)
  • Black pepper (optional)

Method

  1. Toast the sourdough bread until golden and crisp. You can use a pan or toaster.

  2. Peel the boiled eggs and slice them into round pieces.

  3. Spread mayonnaise evenly over the toasted bread.

  4. Arrange the egg slices neatly on top of the mayo.

  5. Sprinkle red chilli powder and fresh coriander over the eggs. Add a little salt or black pepper if you like.

  6. Serve immediately while the toast is still crisp.


Tips: Sourdough works really well here, but any bread can be used. Adjust the mayo depending on how creamy you want it. Red chilli powder adds a nice mild heat and colour. Best eaten fresh so the toast stays crisp.
