Home-Style Chicken Curry
A comforting everyday chicken curry with whole spices, ginger-garlic paste, and a rich onion-based gravy.
Ingredients
- 500โ700 g chicken
- 4โ5 onions, sliced
- 1โ2 tbsp oil
- 1 tej patta
- 1 small piece dalchini
- 1/2 tsp jeera
- 2 small elaichi
- 1 big elaichi
- 1/2 tsp haldi
- 1โ1ยฝ tbsp ginger-garlic paste
- 2โ3 green chilies, crushed or ground with the ginger-garlic paste
- Salt, to taste
- 1โ1ยฝ tsp chicken masala
- 1โ1ยฝ tsp coriander powder
- 1/2 to 1 tsp Kashmiri red chili powder
- 1/2 tsp garam masala
- Water, as needed
- Fresh coriander leaves, chopped
Method

Heat oil in a pan or kadhai. Add tej patta, dalchini, jeera, small elaichi, and big elaichi. Let them splutter for a few seconds.

Add sliced onions and cook until soft and light golden.

Add the ginger-garlic paste mixed with green chilies and cook for about 30โ60 seconds.

Add the chicken pieces and mix well. Add haldi, salt, chicken masala, and coriander powder.

Cook for 20โ25 minutes on medium heat, stirring in between. If the masala starts sticking or drying out, add a little water and continue cooking until the oil begins to separate.

Add water for the gravy and simmer for a few more minutes.

Add Kashmiri red chili powder and garam masala near the end. Finish with fresh coriander leaves.
